I visited Cataloochee twice in the 2007 season, once in early January (Monday) and early March (Sunday). In both visits, they were the only open ski area in NC, a testimony to there snow making ability. We were doing day trips from the Knoxville area.
Given the limited acerage, Cataloochee does well. Their beginner's slope (Eazy Way) is excellent, long and smooth. The top of the mountain has moderately challanging intermediate/advance terrain (Omigosh). What is lacking in snow fall is made up with snow making. For the Southeast, it has a decent vertical drop.
Service at the area was professional and friendly. My daughters and I took lessons. The instructors were professional and personable, and at times downright humorous. The staff at the ski shop, the rental counter and the lodge were above average. The place had a family atmosphere.
On the days we were skiing, the lift line was non-existant.
While we didn't use them, we drove by a fair number of motels, shops and restaurants in Maggie Valley.
I've been to some of the best and worst ski areas over the last 30-years. I consider Cataloochee a fine day area, especially for those learning to ski or ride (and maybe for those of us who needing to work out the kinks on our new shaped skis).
